New Cake Recipes

Halloween Party Cupcakes

12/3 c. flour
¼ c. sugar
1 T. pumpkin spice
1 tsp. Baking soda
¼ tsp. Baking powder
1 egg
1 c. canned pumpkin
2 t. oil
2/3 c. buttermilk
¼ c. mini chocolate chips
In a large bowl, mix together the flour, sugar, spice, baking soda & powder. In another bowl, whisk together egg, pumpkin, oil and buttermilk. Stir in choc. Chips. Pour the pumpkin mixture over the dry ingred. And stir until just moistened. Divide the batter between 18 paper lined muffin cups. Bake at 350F. for 20-25 minutes. Cool and store in a plastic bag overnight before serving.
Each cupcake equals 15gm of carb.


“Spooky” Chocolate Cake

2/3 cup shortening
1 1/2 c. sugar
3 large eggs
6 T. Cocoa,
3 T. marg, melted
2 1/4 cup flour
1 tsp. Baking soda
1 cup milk, mixed with 2T. vinegar
Beat shortening, sugar and eggs. Melt margarine with cocoa and add to the shortening mix. Add flour, baking soda alternatively with milk. Pour into a 8’’ cake pan and bake at 350 for 25-30 min.
12 pieces equals 30 grams a piece.

White Choc. Chip Muffins

1 1/2 cup flour
2/3 cup sugar carbs3/4 tsp. b.s.
3/4 tsp. Baking powder
1 egg
1 cup sour cream
5 Tablespoon melted butter
1tsp.vanilla
1 cup chips
Mix dry ingredients together Cream butter with sugar and egg. Mix in sour cream. Mix the dry ingredients together with the wet ingredients, add in vanilla. Stir in chocolate chips.
12 muffins of uniform size equal 33 carbs.

Orange Cream Cheese Icing

8 oz. light cream cheese
1/4c. orange juice
1tsp. grated orange rind
With electric mixer, beat all the ingredients together in a deep narrow bowl until light and fluffy. Spread thinly.
1 tbsp. equals ½ fats choice.
